Sweet Heat Meatball Appetizers

(2) lbs. Ground beef, or your choice

(1) 28oz.  (1 lb.12oz) bottle of your favorite barbecue sauce

(1)1oz . Package of Lindita’s Mild Salsa Mix for ground beef

(1) 1oz.  Package of Lindita’s Hot Salsa Mix for barbecue sauce

(1/2) Cup wheat germ (optional) or favorite bread crumbs

(1) tsp. Salt

(1) tsp.  Black pepper

In a medium bowl, add barbecue sauce,  Lindita’s Hot Salsa Mix,  mix well, set aside.

In a large mixing bowl, add ground beef, one package of Linditas’ Mild Salsa Mix, wheat germ and 1 cup barbecue sauce, mix well. Roll meat into small bite size balls until solid. (You don’t want them to fall apart) this recipe will make up to 40 tasty meatballs.

In a oil sprayed skillet, wait a few seconds for it to heat up.

Carefully place the meatballs in the hot skillet and seer the bottom, about two minutes.

Flipping sear the meatballs on the other side for two minutes, or until browned.

You can add a lid while simmering the meatballs.

Lower the heat to medium low and cook the meatballs flipping constantly until they’re done (total cooking time will be between 10 to 20 minutes depending on the size of your meatballs).

Serve warm or cold. Dip into Linditas’ Hot or Mild Barbecue sauce or sour cream. Great for picnic, pot luck, and of course, always for family gatherings….

Left over barbecue sauce can be placed in a sealed container or back into the bottle for later use.

Linditas’ Spicy Love Burgers

(1) lb. Ground beef

(1) 1oz.  Package of Linditas’ Hot or Mild Salsa Mix

In a medium size bowl, add  meat, add one package of Linditas’ Salsa Mix.

Mix well. Grill to perfection.

For a gas grill, reduce the heat to medium 375° - 450° Grill 2 to 3 minutes or more for medium rare burger, three or four minutes more medium, or 5 to 6 minutes for well done burgers. Pan Frying works great too!

Makes 4 quarter pound burgers. Serve on  your favorite buns with all your yummy toppings.

Dita's Tortilla Roll-Ups

(8) Flour tortilla wraps

(1) lb. Cream cheese

Cook tortillas over a Comal or open flame. Place tortillas in a tortilla warmer or dish towel to keep moist.

For a colorful presentation, I used 2 flour, 2 sun-dried tomato, 2 spinach, and 2 wheat tortilla wraps.

In a medium size bowl add cream cheese, and let it soften for at least 20 minutes.

Add one package of Linditas’ mild or hot salsa mix.(I prefer the hot) mix well, spread over tortilla, then roll up tightly.

Place roll ups in a 9 x 13 baking dish and refrigerate for at least an hour or more… ideally, you can prepare the night before.

Cut into 1 inch slices (bite-size). Serve with salsa or guacamole.
