Breakfast Burritos
(8 - 10) Slices of bacon
(2) Medium baked potatoes, shred with skins peeled
(8 - 10) Large scrambled eggs and about an ounce of water
(1 - 1/2) Cups Lindita’s Salsa Mild or Hot
(2) Tablespoons of bacon grease
(2) Cups Mexican shredded cheese
Lindita’s Mild or Hot Spice Seasoning
Black pepper, garlic salt
(10) Flour tortillas
In a large skillet or grilling platter. Place 8 to 10 pieces of bacon making sure they’re not overlapping. Cook, 5- 6 minutes for crispy pieces of bacon. Flip the bacon over and let it cook until firm and crisp. Remove the bacon and place on a paper towel to drain. Crumple the bacon to add to the eggs. (Save some of the bacon grease for later)
Leave enough of the bacon grease to coat the skillet. Add shredded potatoes and spread in an even layer. Cook For about 6 to 7 minutes or until Golden Brown on the bottom. Drizzle with a tablespoon a small amount of the bacon grease. Turn potatoes over for an additional five minutes, or longer depending how crisp you would like them.
Pour scrambled eggs over the potatoes. Sprinkle seasonings. Drizzle some bacon grease if needed. Cook and flip over, add bacon crumbles, salsa and cook for about an additional 3 minutes. Top with shredded cheese and cover with foil while warming up the tortillas.
Add the finished egg mixture to your warm tortillas. Tuck one end of the tortilla in and roll into a tight burrito. Stack the burritos and keep warm.
Makes 10 single serve breakfasts for under $1.30 each!
Store in the refrigerator and pop into the microwave for about 1 minute for 10 fast inflation fighting breakfasts (under $1.30 each)!
Frijoles (Pinto Beans)
(1) 16oz (1 LB.) Pinto Beans
(1) 1 oz. Salt pork (or bacon slices)
(2) Large garlic clove, mashed
(1/4) Teaspoon cumin
(1) Teaspoon garlic salt (optional)
(1-2) Tablespoons Lindita’s Mild or Hot Salsa Mix
Sort and rinse beans. In a large stock pot or Dutch oven along with 5 to 6 cups of water, add beans, salt pork, or bacon, garlic clove, cumin, Lindita’s Salsa Mix. Bring to a boil then reduce heat to a medium to low heat. Cover and simmer a for 1 1/2 to 2 hours until tender. Stir occasionally and add more water when needed. I keep additional 2 cups on hand.
Refried Beans
In a large skillet add beans draining off some of the liquid. Add about 2 tablespoons of bacon grease and mash with a potato masher. Stir until beans thicken, adding additional grease for the best refried beans ever
Then go on a diet hehe. It’s all worth it.
Pairs best with ~
Sparkling Dita Mossa
(1) oz. Tequila (Silver Patron)
(3) oz. Club soda
(3) oz. Orange juice
In a Champagne glass add all the above. Stir and enjoy
