Fresh Fried Tilapia

(1) lb.  Fresh Tilapia

(1 ) Cup Yellow Cornmeal

(1/4)  tsp. Linditas’ Mild or Hot Spice Seasoning

(1/4) tsp. Cajun Seasoning

(1/4)  tsp. Ground Mustard

(1/2)  Cup Milk

(1)  Egg

(1/2)  Cup Vegetable Oil - for frying 

(1)  Lemon, cut into wedges 

Pinch of Salt & Pepper

In a medium size platter, mix cornmeal with Linditas’ and Cajun seasoning.

In a shallow bowl, mix milk, eggs, and mustard and whisk it good. 

Dip the Tilapia fillets in egg mixture, then dredge with cornmeal mixture.

Coat well.

Heat vegetable oil in a heavy skillet to 375°.

Fry fillets 4 to 5 minutes per side or to your liking.

Flipping over once.

Remove and place on paper towel to drain excess oil.

Sprinkle with salt and pepper to taste.

Serve with your favorite tartar sauce and a squeeze of lemon to top.

Serves 4 hungry Sharks

Serve it up with your favorite Chardonnay, and with this lip smacking coleslaw to complete the meal.

Lip Smacking Coleslaw

(1)   Small cabbage, - 4 cups shred or dice finely

(1)   Medium carrot, shred or dice finely

(1/2)   Small yellow onion, diced

(1/2)   Cup of Miracle Whip dressing 

(1/3)   Cup Granulated Sugar 

(1/4)   tsp.  Black Pepper

(1-1/2) tsp. Cider Vinegar

In a large bowl, mix all the vegetables.

In a medium size bowl whisk together the dressing ingredients then pour over the vegetables and stir well.

Cover with plastic wrap and place in the refrigerator for at least two hours.

Stir again before serving.

** This recipe can be prepared ahead of time, refrigerate overnight.
