Cilantro Lime Chicken with peach salsa is fresh, flavorful,  zesty, and sweet with an amazing combination of ingredients and spices. It will definitely entice your taste buds. Perfect for a summer, fall, okay anytime of the year recipe!!

 

Ingredients for the chicken marinade: 

 

  • 4 boneless, skinless chicken breast cutlets (2 lbs.)
  • ¼  cup fresh lime juice (about two limes)
  • 1 tablespoon lime zest (about 20 strokes with a shimmy😁)
  • ¼ cup fresh cilantro, chopped with stems
  • 3 large cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1 teaspoon Lindita’s Mild or Hot Spice Grinder ySeasoning 
  • salt and pepper, to taste

 

Instructions

 

Marinate the Chicken

 

  • In a medium size bowl, whisk together the lime juice, lime zest, cilantro, garlic, olive oil, cumin, Lindita‘s seasoning, salt, and pepper.
  • Add chicken, coat well, and cover. Marinate for at least 30 minutes or up to 6 hours in the refrigerator for more flavor.

 

While the chicken is marinating ~ let’s gather ingredients together for our 🍑salsa

 

Ingredients for the Peach Salsa: 

 

  • 3 ripe peaches, diced, leave the skin on for extra texture
  • ¼ cup, red onion, finally diced
  • 1 jalapeño, seeded, and finely chopped
  • 1 tablespoon fresh cilantro, chopped or mint (optional)
  • juice of 1 lime
  • Salt, to taste

 

Now,  it’s time to make the Peach Salsa🍑

 

  • In a medium bowl, combine diced peaches, onion, jalapeño, cilantro, lime juice, and a pinch of salt.
  • Gently mix, and refrigerate until ready to serve.

 

Let’s cook up that Marinated Chicken

 

  • Stove top: heat skillet or grill pan over medium- high heat. Cook for 6-8 minutes or until golden brown and cooked through.

 

Serve it up with your favorite white rice, adding a squeeze of lime and a touch of cilantro🌿

 

Time to Plate it UP

 

Here’s a couple of fun serving options to try 🍽️

 

  • Place chicken on a plate and top with peach salsa and side of white rice. Garnish with cilantro, lime wedges and roasted jalapeños.
  • Dice or shred chicken, char some corn tortillas for tacos and top with peach salsa and garnish with cilantro and lime wedges 🍋‍🟩 
  • Serve extra salsa with chips and sparkling champagne 🍾🥂to toast the meal
