Cooking with Christina: Tortelloni

Ingredients:

  • 9oz-Tortelloni
  • 1/4 cup-Panko Breadcrumbs
  • 1 tsp-Chili Flakes
  • 1 tbsp-Italian Seasoning
  • 1 tsp-Olive Oil
  • 2 1/2 tbsp-Butter
  • Salt & Pepper
  • 2 cloves-Garlic
  • 1-Shallot
  • 2-Roma Tomatoes
  • 1-Zucchini
  • Shredded Mozzarella

Roasted Veggie Directions:

  1. Preheat the oven to 450°
  2. Cut the zucchini & 2 tomatoes
  3. Thinly slice the shallot
  4. Mince the 2 cloves of garlic
  5. Place the zucchini, tomatoes, cloves and garlic onto a baking sheet
  6. Drizzle some oil on them
  7. Add salt & pepper for flavor
  8. Place the cooking sheet into the oven for 15-20 minutes

Sauce Directions: 

  1. Place 2 tbsp of butter in the microwave for 10-15 seconds
  2. Add Italian seasoning, salt & chili flakes 

Panko Topping Directions

  1. Spray cooking pan or add the other 1/2 tbsp of butter to the pan
  2. Add Panko Bread Crumbs to the pan 
  3. Stir for 2 - 3 minutes until golden brown

Tortelloni Directions

  1. Boil water 
  2. Add a pinch of salt
  3. Once it's done boiling add tortelloni
  4. Strain tortelloni once it's fully cooked
  5. Add a little bit of olive oil into your cooking pot 
  6. Add the butter sauce
  7. Add 1/4 cup of water 
  8. Add the cooked tortelloni
  9. Mix it together

Time to Plate: 

  1. Place the tortelloni with butter sauce onto a plate
  2. Add the roasted veggies
  3. Add the cooked Panko Bread Crumbs
  4. Add some shredded mozzarella
