Add some flavor into your life with another familia traditional recipe, Fideo Loco! This easy step by step video contains 3 recipes combined into one meal. Frijoles (Pinto Beans), Fideo & Panchitos Pan.

 

Frijoles (Pinto Beans)         

2 - lbs. clean and rinse Pinto Beans

2 - whole garlic cloves

1 - 2oz. Salt Pork

1/2 - tsp. ground cumin  ​

In a large stock pot or Dutch oven along with 8-10 cups of water, add beans, Salt pork, cloves, cumin and bring to a boil, 

Reduce heat to a low simmer. 

Cover and cook for  1 1/2 to 2 hours or longer. 

Stir occasionally and add more water when needed. 

I keep an additional 4 cups on hand.

Fideo​

1 - tbsp. cooking oil (I prefer Olive Oil)

1 -7oz. bag of Cut Fideo (Fine)

1 - lb. ground beef cooked (optional)​

1/2 - cup diced yellow onion​

1 - 8oz.  can tomato sauce​

1 - Garlic clove finely minced​

1/2 - tsp of salt & pepper​

1/2 - cup Lindita’s Hot prepared salsa (I prefer for a Spicier option)

1 - small bunch of fresh cilantro

2 to 3 cups water or more

In a large skillet add oil. 

Once heated, add Fideo. 

Stir constantly to a lightly brown.  

Add onions and stir generously. 

Add cooked ground beef, water,  tomato sauce, garlic and cilantro (this is when you add Lindita’s Salsa!) 

Stir well, bring to a slight boil, cover.

Bring to a low simmer for about 10 minutes. 

Turn off,  crack the lid to complete cooking. 

Panchitos Pan

1 - Package of Jiffy Mix  just follow the recipe directions

1 - egg

1/3 - cup milk

1 - tbsp  cooking oil 

Heat a lightly oiled griddle or frying pan over medium high heat. 

Scoop batter onto the griddle, approximately tablespoon per pancake (Pan) once edges brown then flip. 

Makes 8 - 10 depending on size.
