Aurora Cooks with Christina: Arepas & Tomatillo Salsa

Join Aurora Cooks, February 22nd, in a feast of Arepas & Salsas! Menu of Arepas: Ancho Shredded Pork & Mango, Chicken & Avocado, Black Bean & Corn, & Mushroom & Cotija. Served with Tomatillo Salsa and Pico de Gallo.

Arepa Ingredients:

  • 1/2 cup monterey jack cheese
  • 1/4 cup butter
  • 1 1/2 cup arepa (P.A.N) mix
  • 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 lime

Directions:

  • Turn griddle to 350 degrees
  • Turn oven to 350 degrees
  • Mix the arepa (P.A.N) flour into a bowl 
  • Add salt and baking powder
  • Mix in the butter 
  • Mix in the monterey jack cheese
  • Boil 18 ounces of water and pour it into the mixture
  • Squeeze in 1/2 of a lime 
  • Cover the bowl with saran wrap and set it aside for 30 minutes
  • Form dough into a golf ball-sized shape (1/2 inch thick)
  • Add oil to your griddle
  • Place arepas on the griddle 
  • Cook for 5 minutes or until brown on each size
  • Transfer Arepas onto a cooking pan 
  • Place into the oven at 350 degrees for 6 minutes
  • Plate the Arepas and add the tomatillo sauce on top 
  • Finish the dish with a squeeze of lime 

Tomatillo Salsa:

  • 1/2 onion
  • 3 tomatillos
  • 1 jalapeno 
  • 3 cloves of garlic
  • 1 1/2 tablespoons of lime juice

Directions:

  • Preheat oven to broil or 425 degrees
  • Cut onion
  • Peel & cut tomatillos in half 
  • Cut jalapeno
  • Place the ingredients onto a cooking sheet
  • Place cooking sheet onto the top oven rack
  • Cook for 5 minutes
  • Remove from the oven and place ingredients into a processor 
  • Add 3 cloves of garlic into the processor
  • Add 1 1/2 tablespoons of lime juice into the processor
  • Pulse processor
  • Add cilantro with stems into the processor
  • Plus processor
  • Add a pinch of salt
  • Place tomatillo salsa into a bowl
